This sweet and gingery carrot mash has just 4 ingredients and can be thrown together in less than 20 minutes. It also packs in lots of healthy nutrients like beta-carotene and vitamin A to keep your skin and immune system in tip-top shape!
Put the carrots in a medium sauce pan with 4 cups of water and boil for 15 minutes.
Drain the water from the carrots and add all ingredients to a blender.
Blend until only small chunks of carrot are remaining.
Top with coconut shreds (optional) and serve!
