Crystallized Ginger Carrot Mash

This sweet and gingery carrot mash has just 4 ingredients and can be thrown together in less than 20 minutes. It also packs in lots of healthy nutrients like beta-carotene and vitamin A to keep your skin and immune system in tip-top shape!

Ingredients

  • 16 Ounces Carrots, Cut and Peeled
  • 1/4 Cup Crystallized Ginger (about 10 pieces)
  • 1/4 Cup Light Coconut Milk
  • 1/4 Tsp Cinnamon
  • 2 Tsp Coconut Shreds (optional)

Instructions

  1. Put the carrots in a medium sauce pan with 4 cups of water and boil for 15 minutes. 

  2. Drain the water from the carrots and add all ingredients to a blender. 

  3. Blend until only small chunks of carrot are remaining. 

  4. Top with coconut shreds (optional) and serve!
