Sweet Potato Sliders

Ingredients

Turkey Burger Patties:

  • 16 Ounces Ground 99% Lean Turkey
  • 2 Tsp Fresh Minced Garlic
  • 1/2 Tsp Salt
  • 1/8 Tsp Black Pepper
  • 1/4 Cup Trader Joe's Almond Mozzarella Style Shreds (or a natural, low-fat cheese)
  • 3 Cups Spinach

Toppings:

  • 8 Pieces Trader Joe's Uncured Peppered Turkey Bacon, Prepared
  • 1/2 Small Red Onion, Sliced (125g)
  • 1 Small Avocado, Mashed

Sweet Potato Bun:

  • 1 Extra Large Sweet Potato (at least 8 ounces)
  • 1/8 Tsp Paprika
  • Olive Oil

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit and prepare a large baking sheet by spraying lightly with olive oil.

  2. Begin slicing your sweet potato into 1/2 inch thick disks. Next, sprinkle sweet potatoes with 1/8 tsp of paprika and bake for 20 minutes. Set aside once done.

  3. Meanwhile heat a large skillet on medium heat and add spinach. Cook until wilted and set in a medium mixing bowl.

  4. Add all remaining turkey burger ingredients to the medium mixing bowl and mix until evenly distributed. 

  5. Using your hands or a large spoon, make 16 equal-sized patties from the mixture (about 1 ounce each). You will want the patties to be thick and tall so that they fit on the sweet potato buns. 

  6. Cook patties on your large skillet on low-medium heat, keeping them covered with a lid. Patties should be cooked for about 5 minutes on each side, but this will depend on how thick you made your patties.

  7. While patties are cooking begin grilling sliced red onion in a small pan on medium heat. Cook for about 8 minutes or until golden and tender. Set aside.

  8. Now that all your slider components are ready, assemble each slider with 2 pieces of sweet potato, a few slices of grilled onion, 1/2 tbsp avocado, 1/2 piece turkey bacon, and one turkey patty.

  9. Enjoy! 

Notes

  • For the almond cheese I highly recommend Trader Joe's Almond Mozzarella Style Shreds due to the macronutrients, taste, and meltability. You can also use a mild tasting soy or milk-based cheese.
  • I used Trader Joe's Peppered Uncured Turkey Bacon in this recipe, but you can substitute a turkey bacon of your choosing.
