Raw Ginger Beet Slaw

This colorful slaw is made with tons of raw veggies, fruit, and healthy fats. It makes for a perfect meal-prep dish since it will last in the fridge for nearly a week. Give it a try as a salad or a side!

Ingredients

  • 3 Raw Beets, Shredded
  • 3 Cups Carrot Shreds
  • 4 cups Broccoli Shreds
  • 2 Cups Shelled Edamame
  • 2 Raw Zucchini, Shredded
  • 1 Granny Smith Apple, Diced
  • 1 Pink Lady Apple, Diced
  • 2 Tbsp Ginger Root, Grated
  • 1/3 Cup Balsamic Vinegar
  • 1/3 Cup Raw Hazelnuts, Crushed
  • Avocado (optional)

Instructions

  1. Prepare all of your fruit and vegetables per the ingredient list above and then combine them in a large serving bowl.

  2. Add minced ginger root, balsamic vinegar, and crushed hazelnuts.
  3. Toss and serve!
