Quick and Easy Black Bean Soup

This warm and filing black bean soup has a nice spicy kick and a smooth creamy base. It takes just a few common ingredients and 15 minutes to make.

Ingredients

  • 3 Cups Black Beans, Drained and Blended
  • 1.5 Cups Black Beans, Drained (not blended)
  • 4 Cups Vegetable Broth
  • 3/4 Cup Fresh Medium Salsa
  • 4 Ounces Tuscan Kale (about 4 cups)
  • 3/4 Tbsp Chili Powder

Instructions

  1. Add 3 cups of rinsed and drained black beans to a blender and blend until smooth.

  2. Turn the stove on medium-high heat and put all ingredients into a large sauce pan.
  3. Cook for 10-15 minutes or until kale is tender.
  4. Serve!

Notes

  • If desired, top with avocado and tortilla chips.
