Pumpkin Spice Dressing

This unique dressing features pumpkin, a hint of apple, some sweet black strap molasses, and all of your favorite fall spices. It is sweet, healthy, and pairs perfectly with a harvest salad with brussels sprouts, apple, and butternut squash.

Ingredients

  • 1/3 Cup Pumpkin Puree
  • 3 Tbsp Apple Cider Vinegar
  • 2 Tbsp Unsweetened Almond Milk
  • 1.5 Tbsp Raisins
  • 1 Tbsp Walnuts
  • 1 Tbsp Lemon Juice
  • 1 Tsp Black Strap Molasses (see notes)
  • 1/4 Tsp Cinnamon
  • 1/8 Tsp Ginger
  • 1/8 Tsp All Spice (optional)

Instructions

  1. Put all ingredients in a blender or food processor and blend until smooth.
  2. Serve overtop of a bed of greens and enjoy!

Notes

  • The black strap molasses can be omitted or substituted with maple syrup or honey; however, it won't have as rich and complex of a flavor.
