Oil-Free Vegan Mayo

An oil-free mayonnaise that contains no dairy, eggs, or artificial ingredients. It's super smooth and versatile. Try it on your sandwiches, sushi, egg salads, or wherever you please!

Ingredients

  • 3 Tbsp Raw Cashews, Soaked
  • 6 Ounces Soft Tofu (2 servings)
  • 2 Tsp Lemon Juice
  • 2 Tsp White Miso Paste
  • 1 Tsp Dijon Mustard
  • 1 Tsp Onion Powder
  • 3/4 Tsp Garlic Powder
  • Salt (if desired)

Instructions

  1. If you haven't already done so, soak your cashews in water for at least one hour then drain the water.

  2. Put all ingredients in a food processor and blend until smooth and creamy.
  3. Enjoy!

Notes

  • You may also choose to add additional spices based on what you are using it for (i.e. sriracha, curry powder, paprika, etc.)
