Mini Cinnamon Roll Bites with Orange-Cream Icing

These plant-based cinnamon roll bites have no oil, sugar, or butter. Made with lentils, sweet potato, and dates, you can feel good about this sweet treat.

Ingredients

Cinnamon Roll

  • 1/3 Cup Sweet Potato, Cooked and Mashed (120g)
  • 1/3 Cup Yellow Lentils, Cooked
  • 7-8 Dates (50g)
  • 2 Tbsp Oats
  • 3 Tbsp Banana
  • 1/2 Tsp Cinnamon
  • 1/2 Tsp Vanilla Extract
  • 1/8 Tsp Nutmeg
  • 1 Tbsp Vital Wheat Gluten (optional for added protein and a chewier cinnamon roll)

Orange-Cream Icing

  • 1/4 Cup Forager Plain Cashewgurt (or other plain non-dairy yogurt)
  • 1/4 Cup Raw Cashews, Pre-Soaked
  • 1/2 Small Orange
  • 1 Date
  • 1/4 Tsp Cinnamon

Instructions

  1. Preheat oven to 350 Fahrenheit. Prepare a baking sheet with parchment paper.
  2. Put all of the cinnamon roll ingredients in a food processor and blend until smooth.

  3. Remove dough from food processor. Take 2-3 tsps of dough and roll it between your palms to form little snake-like pieces of dough. Circle each piece of dough around itself to form a spiral. Recipe should yield around 1 dozen cinnamon roll bites.

  4. Cook cinnamon roll bites in the oven for about 25 minutes.

  5. Meanwhile prepare your icing by combining all icing ingredients in a food processor and blending until smooth.
  6. Once your cinnamon roll bites are done let them cool. Then, drizzle icing overtop of them and enjoy!
