Green Machine Salad

This super healthy salad will ensure you get plenty of greens in your diet! Packed with nutrient-dense vegetables like sunflower sprouts, kale, and broccoli this salad is high in iron and fiber, but low in calories.

Servings 1

Ingredients

  • 3 Cups Power Greens Lettuce (baby chard, kale, and spinach)
  • 1 Cup Sunflower Sprouts
  • 1 Cup Broccoli Florets, Steamed or Raw
  • 8 Sugar Snap Peas, Raw
  • 6 Asparagus Spears, Steamed or Grilled
  • 2 Tbsp Green Peas, Steamed or Raw
  • 1 Serving Lemon Basil Dressing (see recipe in notes)

Instructions

  1. Cut your asparagus, snap peas, and broccoli florets into 1" pieces.
  2. Fill a large bowl with all of the ingredients above.
  3. Top with Lemon Basil Dressing and serve!

Notes

  • Lemon Basil Dressing can also be substituted for a green goddess dressing or vinaigrette of choice.
  • For a more calorie and protein dense salad try adding grilled tempeh, avocado, and raw sunflower seeds.
