Easy Roasted Sunchokes

Sunchokes, also known as Jerusalem Artichokes, are a nutty, versatile root vegetable. By roasting the sunchokes and seasoning them with nutritional yeast they become tender and sweet with a bit of a buttery note. High in fiber and iron they make a great addition to any meal. Give them a try!

Ingredients

  • 16 Ounces Sunchokes
  • 3 Tbsp Nutritional Yeast
  • 1 Tsp Olive Oil
  • 1/4 Tsp Garlic Powder
  • Salt
  • Pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and line a cooking sheet with a piece of foil or parchment paper.

  2. To prepare the sunchokes, wash them thoroughly and be sure to remove any excess dirt.

  3. Once washed chopped the sunchokes into 1 inch cubes and place in a small bowl.

  4. Add all remaining ingredients and spread evenly to cover all the sunchoke pieces.

  5. Place the sun chokes on your lined baking sheet and roast them in the oven for 25-30 minutes.

  • Sunchokes can be found at most Whole Foods and seasonally at Trader Joes.
