Date Paste

Date paste is an excellent natural sweetener made from dates, a sweet flowering fruit. Dates are also considered low-glycemic, so they won't cause your blood sugar to spike. Date paste can be used as a binder and sweetener in a wide variety of recipes such as protein bars, cookies, breads, dressings, and more!

Servings 20 Servings (about 1 teaspoon or 11g of paste)

Ingredients

  • 1.5 Cups Pitted Dates (215g, see note)

Instructions

  1. Add 1/2 cup of dates (see note) in a food processor or powerful blender and blend until a ball of dough forms. 

  2. Take the ball of dough from the processor and break into 5-10 smaller balls of dough. Place the dough balls back in the processor and blend until a single ball of dough forms once again.

  3. Repeat steps 1 and 2 until the dough is blended into more of a smooth paste. This shouldn't take more than a few minutes with a decent food processor. 

Notes

  • If your dates are not moist and fresh soak them in water for 30 minutes then drain before blending. 
  • This recipe makes a very, very thick paste. If you want more of a peanut butter like consistency add 1 tbsp of water. 
  • Store date paste in the fridge for up to 1 month.
