Chipotle Cashew Cheese

This cashew based cheese is rich, creamy, and vegan-friendly! Made with cashews, nutritional yeast, and chipotle powder it truly tastes like nacho cheese. With clean ingredients and no dairy you don't have to feel guilty about indulging in this cheese!

Ingredients

  • 1/2 Cup Pre-Soaked Raw Cashews
  • 2 Tbsp Nutritional Yeast
  • 1/2 Tsp Chipotle Powder
  • 1/2 Tsp Fresh Minced Garlic
  • 1 Tsp Fresh Squeezed Lemon Juice
  • 2.5 Tbsp Water
  • 1/4 Tsp Paprika
  • 1 Pinch Salt

Instructions

  1. Pre-soak your cashews in water for at least one hour (the longer the better).
  2. Drain your cashews and put them in a food processor or blender. Add all remaining ingredients and blend until smooth.
  3. Enjoy with on my Plant-Based Vegan Nachos (see notes), with Brad's Cheddar Veggie Chips, in a taco salad, or on top of any of your creations.
