Black Bean Protein Burger

These plant-based burgers are a great alternative to meat or highly processed store-bought veggie burgers.

Ingredients

Part One:

  • 2 Flax Eggs (see notes)
  • 1/2 Cup Black Beans
  • 7 Tbsp Sacha Inchi Protein Powder (or plain plant protein powder of choice)
  • 2-3 Cloves Garlic
  • 2 Tsp Cumin
  • 2 Tsp Chipotle Powder
  • 1 Tsp Paprika
  • Salt and Pepper to Taste

Part Two:

  • 2 Tbsp Red Onion, Chopped
  • 1/4 Cup Black Beans

Instructions

  1. Preheat your oven to 375 Fahrenheit and line a baking sheet with parchment paper.
  2. Put all ingredients listed in part one in a blender and blend until spices are mixed throughout (it's ok if the mixture is chunky).

  3. Add ingredients from part two to the blender and pulse briefly (5-10 seconds).

  4. Remove dough from blender and form four patties with your hands and place on the baking sheet.
  5. Bake for 25-30 minutes.

Notes

  • To make two flax eggs mix 2 tbsp flaxseed meal with 6 tbsp of water and let it thicken for 15 minutes.
  • These burgers are great on a bed of greens topped with my Spicy Mango Dressing.
