Cucumber and Broccoli Slaw with Peanut Butter Dressing

A crunchy, refreshing, and low-calorie salad made with four simple ingredients and topped with a light peanut butter dressing.

Ingredients

Slaw

  • 1 English Cucumber, Spiralized
  • 2 Cups Brocolli Slaw (shredded broccoli)
  • 3/4 Cups Green Onion, Diced
  • 1 Pink Lady Apple, Diced
  • Optional Additions: Nuts, Edamame, Tofu, or Dried Fruits of Choice

Peanut Butter Dressing

  • 1/3 Cup PBfit Peanut Butter Powder
  • 1/3 Cup Unsweetened Almond Milk
  • 1 Tbsp Coconut Aminos
  • 1.5 Tsp Soy Sauce (optional)

Instructions

  1. Put all pre-diced slaw ingredients in a large mixing bowl.

  2. In a small bowl, wisk together all dressing ingredients.

  3. Pour dressing over top of the slaw and toss.

  4. Add additional toppings of your choice and serve!
