Chocolate Covered Chocolate Protein Bars

These simple and delicious chocolate protein bars are powered by veggie-protein and covered in a layer of indulgent chocolate. They are a naturally-sweetened treat that tastes more like a candy bar.

Ingredients

Chocolate Protein Bar

  • 2 Servings MRM Chocolate Veggie Elite Protein Powder
  • 3/4 Cup Unsweetened Almond Milk
  • 7 Pitted Dates
  • 4 Tbsp Coconut Flour
  • 2 Tbsp Walnut Baking Pieces
  • 1 Tbsp U Choose Superfoods Super Seed Mix

Chocolate Coating

  • 2 Tablespoons Enjoy Life Chocolate Baking Morsels
  • 1/2 Teaspoon Coconut Oil

Instructions

  1. Place protein powder, coconut flour, dates, and almond milk in a food processor and blend until smooth.
  2. Add walnuts and Super Seed Mix and pulse briefly to distribute.
  3. Remove dough from food processor and press it into a square container (around 5"x5" is best). Set aside.
  4. Place chocolate morsels and coconut oil in a shot glass sized container, then microwave it on medium frequency for 30 seconds at a time. Every 30 second remove the chocolate from the microwave and stir. Repeat until smooth.
  5. Pour chocolate over top of the pressed protein bars and distribute evenly with a rubber spatula.
  6. Refrigerate until chocolate is firm.
  7. Enjoy!
